Grains
We grow a range of certified organic grains on our farm, including spelt, corn, rye, wheat, barley, oats and peas. We currently have spelt, rye, corn and wheat available as whole kernels and flour ground in our stone mill.
Spelt is an ancient grain that has baking qualities very similar to wheat but with a nuttier flavour (or maybe that just reflects the personality of the grower coming through – some new form of terroir). Some people with a sensitivity to wheat are able to tolerate baked goods made from spelt.
Our cornmeal is on the menu at Hank’s (Church south of Front) and was recently featured in the food section of The Toronto Star.
